I have moved on to cereal most mornings and if it is portable I am getting the best of both worlds, I always remember begging my mom to buy me cereal bars for breakfast never enjoyed the cold stuff especially in the winter (cali girls get cold to).
I think it was easier for me because I wanted to sleep in and they were so convenient; things haven’t changed I still want to sleep in and grab a bar and go. Since I am looking to shed some pounds (yes I am still on a diet kick) I decided that I would save myself some time in the morning and just make some cereal bars that I can grab and go. I don’t know how long they will last but I am hoping to keep my intake under control.
My favorite cereal bars as a child were always the crispy ones, I guess you can say I prefer crispy over chewy. I love crispy bacon and crispy cookies. I am obsessed with crunchy things. In the past I have had an addiction to celery that was unreal. If you are not of fan of crispy cereal bars, substitute the rice crispy cereal for rolled oats.. I went a little overboard on the chocolate but who doesn’t love a little extra dark chocolate..
- 1/4 cup peanut butter
- 1/4 cup maple syrup
- 1/2 cup egg-whites
- 1/4 cup ground flax seeds
- 1/2 cup of rolled oats
- 3 cups of rice crispy cereal
- 1 cup special dark chocolate chips
- Preheat oven to 350 degrees. Grease a pan with cooking spray are oil. If your peanut butter is not soft place in a microwave safe bowl for 30 seconds until peanut butter is melted, if not skipped this step and add the maple syrup.
- Place egg whites and flax seeds in a small bowl and whisk until it looks like an egg mixture. Pour the mixture and peanut butter mixture into a large bowl and stir until all the ingredients are incorporated. Gradually stir in rolled oats and rice cereal until it is coated. Press mixture into the pan.
- Bake for 20 minutes or until the edges are brown. Let the bars cool completely; add melted special dark chocolate chips on top place in fridge and let bars cool completely.
- Cut up and serve
