Oh the season is here for baking and everything nice! Sweet potatoes have arrived and it’s the only thing I have been craving since I have been pregnant. I have been so nauseous lately that I really wish I can lay in bed all day and do nothing. I thought the second trimester was supposed to be the baby moon, but I guess I was wrong because at 19 weeks it’s like morning sickness is coming back with vengeance.
Well this sweet potato bread is oh so delicious and taste so good. I really love the dark warm notes of molasses and the thick chunks of sweet potato that compliment this quick bread. If you are in the mood for a low fat holiday sweet treat give this spiced sweet potato bread a try!
Sweet Potato Spiced Bread Recipe:
1 ½ cups all-purpose flour
1 egg ( I used large)
2 tsps. Baking powder
½ tsp. Salt
2 tsps. Pumpkin spice
¼ cup almond milk
1 cup mashed Sweet Potato (packed)
¼ cup molasses
1 cup sugar
