Healthy Oatmeal Peanut Butter Eggs!
Oatmeal Peanut Butter Eggs are all natural, vegan, vegetarian and make a wonderful snack for all those on a diet! I am a huge fan of recreating festive treats to go with any diet and this one is my favorite. The best part was adding the batter to the plastic eggs and waiting for it to set!
I love making treats that everyone can enjoy! This year let’s put the butter, sugar, marshmallows and cereal down. Let’s try healthy Easter treats that are just as festive. The sprinkles are optional but they do add to the theme don’t you think?
One easy test to tell if your batter is ready to be added to the plastic eggs, is roll some of the dough in your hands to form a ball.
Once a ball has been formed you are ready to pack your eggs with the mixture. If it doesn’t roll into a ball, a bit more milk or maple syrup will do the trick.
Oatmeal Peanut Butter Easter Eggs Recipe:
2 ½ cups rolled oats
3 tbsps. pb2 (or any powdered peanut butter)
¼ cup maple syrup
1 tsp. vanilla
5 tbsps. almond milk
1 tbsp. peanut butter
¼ cup mini chocolate chips (optional)
Sprinkles for decoration
Plastic eggs
Recipe Directions: In a medium bowl mix dry ingredients and set aside. In a large bowl add maple syrup, vanilla, milk and peanut butter. Stir until mixture has been combined, add the dry ingredient to the large bowl and mix with hands. Once combined add chocolate chips and sprinkles. Place in plastic eggs and let set in the fridge for 1 hour. Once done, gently open them from the plastic eggs and decorate with sprinkles.
