Yesterday I did a boot camp workout and I can barely walk today! My legs are so sore and wobbly. I think I am going to stay away from boot camp workouts for a while. I didn’t realize how tough they were, you really half to push yourself! I was looking forward to eating a few of these muffins before I headed out the door for work. I guess I should have stashed a few because they were all gone! Baked goods and sweets disappear pretty quickly in this house.
I love a moist muffin with a little a bit of butter melted on top for breakfast. Cinnamon Oatmeal Muffins are pretty moist, light, and fluffy.
Cinnamon Oatmeal Muffins Recipe:
1 egg (room temperature)
1 tbsp. coconut oil (melted)
1 cup milk (I used almond)
½ cup honey
1 cup flour (I used whole wheat)
1 cup rolled oats
½ tsp salt
½ tbsp. baking powder
2 tsps. cinnamon
Recipe Directions: Preheat oven to 400 degrees. In a large bowl add egg, honey, and melted oil. Stir until the ingredients are combined and slowly stir in milk. Add the oats to the mixture and let it rest for 1-2 minutes. Mix the dry ingredients in a small bowl and add to the mixture. Mix until dry ingredients are blended in well. Place cupcake liners in a muffin tin and add 1-2 heaping tablespoons of batter to each liner. Bake in the oven for 20-25 minutes or until a tooth pick inserted in the middle of the muffin comes out clean.

Oh, I SO know the feeling of not being able to walk the day after a hard workout. Not funny. But still quite nice – at least you can feel you’ve been doing something 😉
The muffins look incredibly good. I’ve been craving muffins so much the last couple of weeks, so I am SO up for trying a healthy recipe.
