I now understand why everyone loves butter I believe it is the best thing that has happen to me. I do use butter but I never realized the flavors it brings out of baked goods; until I made blueberry puree bread. I have been making this bread all summer (I have been on a blueberry kick and this hits the spot), but I was using margarine until I ran out of it. I decided to just go ahead and use butter. I will tell you right now throw the margarine out and use the butter! Please use the butter! I almost ate the whole loaf, but Josh had this look on his face as if I was breaking his heart! I think he saved me from eating the whole loaf and having guilt after.
I never knew butter could be so good, I think I am having a love a fair with butter at this moment. I feel like Homer Simpson when he is day dreaming about all the things he wants to do with bacon. I know calories are a major factor, but I think I would rather eat less and take a few more steps everyday than sacrifice taste. Butter has just made a new friend in me and I am looking forward to all the things we can do together. Blueberry Puree Quick Bread Recipe:
- 1 ¾ flour
- 1 cup blueberries
- ¾ cup sugar
- 1 tsp. vanilla
- ½ cup butter (melted)
- ½ tsp. salt
- ½ tsp. baking soda
- 2 eggs
Recipe Directions: Preheat oven to 375 degrees and butter a loaf pan and set aside. Blend blueberries to make a fruit puree and set aside. In a large bowl use a hand mixer and mix melted butter, blueberry puree and sugar; slowly add eggs and vanilla and mix until all the ingredients are mixed in. In a separate bowl sift flour, baking soda and salt. Mix dry ingredients into the wet ingredients. Once done place mixture into a buttered loaf pan and place in the oven. Bake bread for 20-30 minutes or stick a tooth pick in the bread , if it comes out clean the bread is done.
